Yesterday was a day of being in the kitchen. I finished up with Corvan this morning making these out of this world mini apple strudels. They are super easy and oh so good. As we were finishing them up and placing them in the pan I went to put foil over the top. I decided my mom would LOVE these and so therefore I made a couple of pans worth to share with her. Corvan looks at me with big eyes, almost a tear ready to drop and says, “uh, what are we eating for breakfast this morning?” I said, “cereal I suppose.” His little shoulders went down and with a big lip says, “ok!” I couldn’t resist and after making them for breakfast THIS MORNING and they were a huge hit I decided this is what I will make for Christmas breakfast as well. I always like to make something I can make before hand and that is a real treat. I love the flakiness, apple filling, these are so tasty!
mini apple strudels
2 cups choppe peeled tart apples
3 tbls of sugar
3 tbls of chopped walnuts
2 tbls flour
1 tsp cinnamon
1 tbs butter and another tablespoon to drizzle on top of strudels in pan.
6 sheets phyllo dough (14 inches X 9 inches) one package
in a small bowl, combine the apples, sugar, walnuts, flour and cinnamon and butter. Set aside.
Spray pan with Pam.
Place one sheet of phyllo dough on a work surface. Where the two seams are seperate from the others. Now you have 3 pieces to work with. Place 1/3 cup of the apple mixture on one end of the dough bring other side over the top and seam the sides closed. When finished you will have 6 strudels in the pan. Drizzle the remaining butter over top and crumble just a small amount of brown sugar over the top of each of them.
Bake at 350 degrees for 30 minutes or until golden brown.
