egg tortillas

These early morning wrestling days where we have to get up before dawn or so many times when dirt bike racing and no time for breakfast but want something hot going out the door this is what we do, Egg Tortillas. Simple, I make them usually the night before and when getting up I put them in the oven to warm up, place them in a thermal bag and off we go. They stay warm for a really long time.

Egg Tortillas

6 large flour tortillas
6 squares of foil big enough to fit tortillas on
1 dozen eggs
3 tbs water
6 slices of bacon
1/8 cup of shredded cheddar cheese to put onto each tortilla

Place each flour tortilla on top of foil, place cheese on top of tortilla cook bacon and tear into small pieces, place one slice  of torn bacon onto cheese, scramble eggs and water together and cook on stove until fluffy and done.Divide eggs evenly for each tortilla. Fold ends in and roll up.

Of course, if you want to make these really exciting I add sauteed mushroom, bell pepper, onion, etc…
It makes 6 of them, place them all in oven at 150 degrees for 20 minutes.

I tell you, it’s a hit for the kids and a good start of protein for their belly
