I know I have mentioned one hundred billion times, I LOVE my friends! The Lord, how he blesses! So, a couple of weeks ago friend Connie ‘dropped’ by the house. You don’t just ‘drop’ by my house I’m WAY out here, so it was WAY out of her way. This is also the same woman who, when I had Corvan, she came each morning and took my two boys to school early in the morning knowing I didn’t want to get out into the cold with an infant.. She is always thinkin’, ALWAYS….when she ‘dropped’ by she had a huge chunk of salmon with her. She knows how much I love this and she just thought I might want to cook up a salmon. HELLO! She knows me, she does.
This is my favorite way to prepare my salmon.
Pecan Salmon Bake
6 Tbls Dijon mustard
6 Tbls butter, melted
6 Tbls honey
1 cup bread crumbs
1 cup finely chopped pecans
6 tsp chopped fresh parsley
8 ounces of fillets salmon
Preheat the oven to 375 degrees. In a small bowl, mix together the mustard, butter and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.
Season each salmon fillet with salt and pepper. Place on a greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.
Bake for approximately 20 minutes. 10 minutes into it, I begin going to the thickest part and sticking a fork in the middle to see if it is flaky. Once it is, it is done.
