This is what the choice of dessert was for Corvan on his birthday. A boy after his Mom’s own heart.
I have to tell first a little about my love for this particular dessert.
When I was hooked at the hip in high school with my girl friend Dena this is one of the stops we made quite often. Fried ice cream, I am not sure even how Dena knew about it but we LOVED it! However, I would say this place that we stopped, the fried ice cream, it was the real thing and oh how I can remember it to this day!
Here is a picture of us in the 8th grade! We were just so cool!
This is a ‘fake’ version of the real fried ice cream but it is right up there with being the same.
So, here goes……….
Fried Ice Cream Cake
1 stick of butter melted
1 cup of sugar
3 cups of crushed corn flakes
1 tsp cinnamon
Mix above ingredients together and set aside
2 quarts of vanilla ice cream (slightly melted so that you can spread in pan)
You take a 9X13 pan and spread ice cream on the bottom and then on the top you spread the crunch on top of that.
Place into the frig so that it may harden back up.
When serving place in bowl, place a dollop of whipping cream on the top and then sprinkle just a little cinnamon on the top of it all.
