In honor of my mom and recipe

Yesterday was my mom’s birthday, I miss her even though we always seem to have really good conversation every time we meet up on the phone. I look forward to touching her in the near future. (smile)

Mom loves Texas, Mom is a very patriotic girl and Texas does not lack any of that. She loves the southern way,  I think it kind of brings her back to her Kentucky roots a bit. I’m just waiting for the day that I call her and she sounds like my grandma who you could still hear that drawl from the accent even though she didn’t live in Kentucky anymore. 

So here is a reminder of a happy place my mom was in about a year ago. Fun time for us 3.

So in honor of your birthday today, I thought I would post my salad that I’m in love with. I got the recipe and did some of my own version, and I’m glad I did.

MOM’S TEX-MEX pasta SALAD

Produce
  • 1/2 cup packed cilantro, (finely chopped, ~1/3 a bunch), packed
  • 1 Avocado, ripe (I’m not a huge avocado fan so I slice them to sit on the side, I so wish I was it’s so good for your skin)
  • 3/4 cup Bell peppers, assorted sweet
  • 1 cup Black beans
  • 1 cup Cherry tomatoes
  • 1 cup Corn
  • 1/4 tsp Garlic salt
  • 1/4 cup Red onion
    1 finely chopped jalapeno
Condiments
  • 5 tbsp Lime juice, squeezed fresh
Pasta & Grains
  • 3 1/2 cups Farfelle pasta, mini
Baking & Spices
  • 2 tbsp taco seasoning
  • 1 tsp Salt
  • 1 tsp White sugar
Oils & Vinegars
  • 3 tbsp Olive oil
  • 3 tbsp Rice vinegar
    1/2 cup real mayonaise
    1/2 cup sour cream
 
Cook Pasta and let it cool.
 
Give the veggies a good chopping and bring together with the corn and drained beans all these ingredients while preparing the dressing. Add together the lime juice, seasoning, salt, sugar, olive oil, vinegar, mayo, and sour cream. Then add all together, pasta, veggies, and then the dressing.
Place in the frig for 1 hour to make it cold and all the flavors mesh and oh my………
